Mixed Veg Kurma !!!

Mixed veg kurma is one of the famous curry in South India.This kurma will be opt for chapatis, poori , roti, and parathas. This veg kurma is a mix of whole spices with coconut. It is wonderful way to savor a generous serving mixed veggies.



Ingredients:-

Oil      -   3 tsp
Cloves  -  4 nos
Bay leaf  - 1 no
Cinnamon Stick - 1 no
Onion  -  1
Green chilli  -  3
Mixed veggies  - 1 cup of your choice
Mint leaves
Cilantro
Salt to taste
Water   -   add according to you consistency

Saute and Grind:-

Oil                -  1 tsp
Green chilly   -  3 nos
Poppy seeds  -  1 tsp
Fennel seeds  -  1 tsp
Coriander seeds - 2 tsp
Onion          - 1/4 piece
Ginger small piece
Garlic cloves - 5-6
Coconut       - 1/2 cup
Roasted bengal gram  -  2 tsp

Preparation:-

  • Saute all the above ingredients and grind in to wet paste.

  • Heat a pan add 3 tsp of oil, fennel seeds, cinnamon stick, bay leaf, clove.
  • Then add the green chilly and onion, saute it well and add the vegetables one by one.
  • Put a lid for the pan and let the veggies cook for 5 mins.

  • Add enough water for the consistency and let it boil and the add the ground paste.
  • Add enough salt let it cook for 3-5 mind garnish with cilantro and mint.
  • Cilantro and mint will give very nice aroma for kurma.
  • Now serve it hot with paratha.
